Don’t we all love it? This quick easy and delicious rice preparation made Chinese style with specific vegetables and spices is flavourful and hence often ordered.
VEG FRIED RICE
Ingredients
1 small carrot peeled and chopped
½ cup boiled Edamame beans
1 small green capsicum chopped
3 cups boiled short grain rice
4 tbsps oil
3 tbsps finely chopped garlic
2 tbsps finely chopped ginger
3 spring onion bulbs finely chopped
Salt to taste
Crushed black peppercorns to taste
½ tbsp soy sauce
2 tbsps finely chopped spring onion greens + for garnish
1 tsp vinegar
Method
1. Heat oil in a wok. Add garlic ginger and spring onion bulbs and sauté for 1-2 minutes.
2. Add carrot Edamame beans green capsicum and sauté for 2-3 minutes. Add cooked rice salt crushed black peppercorns and soy sauce and mix well.
3. Add spring onion greens vinegar and mix till well combined.
4. Serve hot garnished with spring onion greens.
