STRAWBERRY PARFAIT Ingredients 10-12 strawberries Whipped cream as required 8 tablespoons raspberry jam Strawberry powder for sprinkling Fresh mint sprigs for garnishing Olive oil cake 145 grams refined flour (maida) + for dusting Butter for greasing 80 ml extra virgin olive oil 2 cups castor sugar 1 egg 3 grams salt 5 grams baking powder 113 ml milk Method 1. Preheat oven to 180̊ C. Grease a square cake tin with some butter and dust with some flour. 2. Cream together castor sugar and olive oil till light and fluffy. Add egg and beat. 3. Add flour, salt and baking powder and fold well. Add milk and mix well. 4. Pour the batter in the prepared tin filling 3/4th, put the tin in the preheated oven and bake for 20-25 minutes. Remove from oven, cool and demould. 5. Cut roundels from the cake using a medium size cookie cutter. Fill a piping bag with some whipped cream. Hull and halve strawberries. 6. To assemble one jar, place a cake roundel in it. Top with a tablespoon of jam and pipe in some whipped cream. Layer with 5-6 strawberry halves and place another cake roundel on it. Spread a tablespoon of jam and pipe in some more whipped cream. Sprinkle strawberry powder on top, garnish with mint sprig and serve immediately.
