SPICY NACHOS WITH WHITE SAUCE
Ingredients
3 tablespoons maize flour (makai ka atta)
4 tablespoons whole wheat flour (atta)
3 tablespoons ghee
Salt to taste
3-4 ice cubes
10-12 curry leaves
2 green chillies, hand-torn
1 teaspoon carom seeds (ajwain)
Oil for deep-frying
Red chilli powder for sprinkling
Chaat masala powder for sprinkling
White sauce
1 cup milk
¼ teaspoon dried oregano
¼ teaspoon chilli flakes
1 small green capsicum, finely chopped
¼ cup boiled sweet corn kernels
Method
1. To make homemade salted butter, mix together ghee, salt and ice cubes in a bowl. Refrigerate to chill.
2. To make ground paste, blend together curry leaves, torn green chillies and salt in a blender jar to a smooth paste using water as required.
3. To make nachos, mix together maize flour and 3 tablespoons whole wheat flour, carom seeds, salt and ground paste in a bowl and knead into a semi-stiff dough using warm water as required.
4. Divide the dough into equal portions, flatten each portion by pressing between your palms and roll out into a thin disc.
5. Heat sufficient oil in a kadai.
6. Poke holes on nacho disks using a fork and cut into triangles using a pizza cutter.
7. Deep-fry the nachos in hot oil till golden-brown and crisp. Drain on absorbent paper and transfer to a bowl, sprinkle chilli powder and chaat masala powder on top, toss and set aside.
8. To make white sauce, heat homemade salted butter in a non-stick pan. Add the remaining whole wheat flour and mix well. Add milk, mix well and cook for 1-2 minutes, stirring continuously to make sure that no lumps are formed.
9. Add salt, oregano, chilli flakes and mix well and cook for a minute, stirring continuously. Add capsicum, sweet corn kernels, and mix well. Remove from heat and set aside.
10. Transfer the nachos to a serving plate, pour white sauce on top and serve immediately.
