VANILLA COOKIES
Ingredients
114 grams refined flour (maida)
1 teaspoon vanilla essence
100 grams butter
45 grams castor sugar + for sprinkling
A pinch of salt
½ teaspoon cinnamon powder
5 egg yolks
30 grams toasted and crushed hazelnuts
Icing sugar for dusting
Method
1. Preheat oven to 165˚ C.
2. Cream together butter, 45 grams castor sugar and vanilla essence in a bowl using an electric beater till light.
3. Add salt and cinnamon powder and whisk. Add egg yolks one by one and whisk well.
4. Sift together flour and crushed hazelnut and fold and mix till well combined into a dough. Transfer on the worktop, wrap in a cling film and refrigerate for 2 hours.
5. Divide the dough into small equal portions and shape into balls. Place on a baking tray and slightly flatten the balls. Sprinkle some castor sugar
6. Put the tray into the preheated oven and bake for 10-12 minutes. Remove from oven and set aside for 30-45 minutes cool.
7. Dust with icing sugar and serve.
