Do try it out at home CHILLI OIL WONTONS Ingredients 3-4 tablespoons chilli oil 12-16 wonton sheets 1½ cups lamb mince 1-2 stalks spring onion greens, chopped 2-3 tablespoons chopped fresh coriander leaves 3-4 spring onion bulbs, chopped Salt to taste ½ teaspoon lemon flavoured pepper ¼ teaspoon sugar 1 teaspoon light soy sauce 2-3 tablespoons refined flour 1 teaspoon red chilli flakes Toasted sesame seeds for garnishing Method 1. Combine lamb mince, spring onion greens, chopped coriander, spring onion bulbs, salt, lemon flavoured pepper, sugar and soy sauce in a bowl and mix well. 2. Mix flour in some water and mix well to make a thick slurry. 3. Place the wonton sheets on a worktop. Put a portion of the mince mixture on one end, apply slurry on the edges and fold over to make a triangle. Twist the edges, apply slurry and stick together to form wontons. 4. Heat sufficient water in a steamer. Place the wontons in it and steam for 10-12 minutes. 5. Heat chilli oil in a non-stick pan. Add chilli flakes, mix well and heat well. 6. Place the wontons on a serving platter, garnish with sesame seeds and coriander sprigs and serve hot with the chilli oil.
