MARBLE BREAD
Ingredients
Basic bread loaf
750 grams refined flour + for dusting
20 grams dry yeast
22 grams sugar
20 grams milk powder
5 grams salt
40 grams butter
Oil for greasing
Whole wheat bread
500 grams whole wheat flour + for dusting
Oil for greasing
4 teaspoons (20 grams) fresh yeast
4 teaspoons (20 grams) sugar
1 tablespoon rolled oats + for sprinkling
2 teaspoons (10 grams) salt
4 teaspoons (20 grams) butter + for brushing
Milk for milk wash
Method
1. Preheat the oven at 180ºC.
2. To make basic bread loaf, take yeast in a bowl. Add sugar and
1 tablespoon warm water, mix well and set aside for 5 minutes
or till bubbles appear.
3. Take refined flour, milk powder and salt in a planetary mixture.
4. Add dissolved yeast and mix lightly. Add about 2 cups chilled
water and knead well into a soft dough.
5. Add butter and knead again, dusting flour. Cover with a wet
muslin cloth and set aside to ferment for 30 minutes in a warm
and dry place.
6. After 15 minutes, knock back the dough.
7. To make whole wheat bread, combine yeast and sugar in a
bowl. Add 1-2 tablespoons warm water, mix well and set aside
for 5 minutes or till bubbles appear.
8. Combine whole wheat flour, 1 tablespoon oats, yeast mixture,
salt and butter in a planetary mixer. Mix, adding 1 cup (250 ml)
water, little by little to form a soft dough.
9. Dust the worktop with some flour, remove the dough on the
worktop and knead well by stretching. Divide the dough into
equal portions and shape them into small buns, dusting with
flour.
10. Place the dough in another bowl, cover with wet muslin cloth
and set aside.
