MOZZARELLA STUFFED CHILLI PAKORA
Ingredients
8 medium Bhavnagri green chillies
1 cup grated mozzarella cheese
Oil to deep fry
½ tsp mixed dried herbs
1 tsp chaat masala
1½ cups gram flour (besan)
½ cup cornstarch
Salt to taste
¼ tsp turmeric powder
½ tsp red chilli powder
A pinch of baking soda
Method
1. Slit green chillies without cutting through and remove the seeds.
2. Heat sufficient oil in a kadai.
3. Place mozzarella cheese in a bowl add dried mixed herbs and chaat masala and mix well.
4. Stuff this mixture into the chillies and set aside.
5. Mix gram flour with cornstarch salt turmeric powder red chilli powder and baking soda in a bowl. Add sufficient and whisk to make a thick and smooth batter.
6. Dip the stuffed chillies in this batter slide gently into hot oil and deep-fry till golden. Drain on absorbent paper.
7. Serve hot.
