TOMATO AND EGG STIR FRY Ingredients 3-4 medium tomatoes 3 eggs 1 tablespoon oil 3 spring onions with greens 2 fresh green chillies Salt to taste 1 tablespoon soy sauce 1 tablespoon sweet-chilli sauce Method 1. Heat oil in a non-stick pan. 2. Slice spring onion bulbs reserving the greens. 3. Add sliced onions to hot oil and sauté till golden. 4. Diagonally slice green chillies, add to the pan, mix and cook for a minute. 5. Cut tomatoes, add to the pan and toss to mix. Add salt and soy sauce, mix and cook for a minute. 6. Cut spring onion greens. 7. Break eggs in a bowl and beat well. Add sweet-chilli sauce, beat again, add to the pan and mix well. 8. Add chopped spring onion greens and toss to mix. 9. Serve hot garnished with bell pepper curls and a coriander sprig.
