CHEDDAR EMMENTAL CHEESE OPEN SANDWICH
Ingredients
30 grams English cheddar cheese
30 grams emmental cheese
8 ciabatta bread slices
Butter for spreading
8-10 black peppercorns
1 teaspoon dried mixed herbs
1½ teaspoons sea salt
1 teaspoon red chilli flakes
1 teaspoon roasted garlic flakes
Method
1. Heat a non-stick pan. Place the bread slices and toast them on low heat from one side till golden brown.
2. Combine black peppercorns, mixed dried herbs, sea salt, chili flakes and roasted garlic flakes in a peppermill, cover and shake well to mix.
3. Spread some butter on one side of the bread slices while in the pan, flip and toast on low heat till golden brown from the other side.
4. Cut the cheddar cheese and emmental cheese into thick slices. Cut the emmental cheese slices into triangles.
5. Place the emmental cheese triangles and cheddar cheeses slice on one side of the each toasted bread slice, cover and cook till the cheese melts.
6. Crush and sprinkle the peppercorn-herb mixture on top of bread slices and serve hot.
