PANEER VARUVAL
Ingredients
200 grams cottage cheese (paneer), cut into 1 inch cubes
2 tablespoons rice flour
1 tablespoon lemon juice
2 teaspoons ginger-garlic paste
1 tablespoon tamarind pulp
½ teaspoon turmeric powder
2 tablespoons red chilli powder
1 teaspoon cumin powder
Salt to taste
¼ cup oil
Method
1. Combine rice flour, lemon juice, ginger-garlic paste, salt, tamarind pulp, turmeric powder, red chilli powder, salt, cumin powder, 2 tablespoons oil and sufficient water and mix to make a smooth paste.
2. Mix ginger-garlic paste with cumin powder, tamarind pulp, red chilli powder, turmeric powder, salt, rice flour and two tablespoons of oil.
3. Marinate cottage cheese in this mixture and set aside for 30 minutes, preferably in the refrigerator.
4. Heat the remaining oil in a non-stick pan, add the marinated cottage cheese and cook for a minute on high heat. Turn over the cottage cheese and cook for another minute. Decrease heat and cook for two to three minutes turning the cottage cheese occasionally for uniform cooking.
5. Remove, drain on absorbent paper, sprinkle lemon juice and serve hot.
