CARAMEL CUSTARD
Ingredients
¾ cup castor sugar
1¼ cups milk
1 teaspoon vanilla essence
3 eggs
Fresh mint leaves for garnishing
Method
Preheat oven to 180° C.
Heat ¼ cup sugar in a non-stick pan and cook till it caramelizes.
Pour milk in a bowl. Add remaining sugar, vanilla essence and eggs and whisk well using an electric beater till sugar melts.
Put a spoonful of caramel in small individual custard moulds and pour the milk mixture filling ¾th of it.
Place the prepared moulds in a baking tray and pour some water in the tray. Put the tray into the preheated oven and bake for 30 minutes. Remove from oven, cool and demould.
Serve garnished with mint leaves.
