MALWANI CHICKEN RAWA FRY
Ingredients
½ cup cubed boneless chicken
½ cup semolina (rawa)
½ inch cinnamon
3-4 black peppercorns
2-3 cloves
1 green chilli
½ inch ginger
4-5 garlic cloves
1 tablespoon chopped fresh coriander leaves
Salt to taste
Juice of ½ lemon
½ teaspoon turmeric powder
1teaspoonMalwanimasala
½ cup yogurt
Oil for shallow-frying
½ cup rice flour
Method
1. Grind together cinnamon, peppercorns, cloves, green chilli, ginger, garlic and chopped coriander alongwith some water to a fine paste.
2. Take chicken in a bowl. Add salt, lemon juice, turmeric powder, Malwanimasala and yogurt and mix well. Add prepared paste, mix and set aside for 15-20 minutes.
3. Heat oil in a non-stick pan.
4. Take rice flour and semolina in a plate and mix well.Coat chicken pieces with rice flour-semolina mixture.
5. Shallow-fry the prepared chicken from both sides in hot oil till golden and crisp. Drain on absorbent paper.
6. Serve hot garnished with a mint sprig and lemon slice.
Preparation time: 20-25 minutes
Cooking time: 8-10 minutes
