Hot Red Chillies deseeded and stuffed with a flavourful spice mix and made into an achaar (pickle) for you to relish along with your meal to spice up the pallette. BHARWAN LAAL MIRCH KA ACHAAR Ingredients 8 fresh red chillies ½ cup mustard seeds ½ cup cumin seeds 1 tbsp carom seeds 15-20 black peppercorns 2 tsps fenugreek seeds 1½ tsps asafoetida (hing) 2 tbsps fennel seeds 1 cup mustard oil 1 tbsp turmeric powder 1 tsp onion seeds (kalonji) 2 tsps black salt 3 tsps salt 2 lemons Method 1. Heat a pan. Add mustard seeds cumin seeds carom seeds black peppercorns fenugreek seeds 1 tsp asafoetida fennel seeds and sauté for 2-3 minutes on medium heat. 2. Transfer in a plate and set aside to cool down. 3. Heat mustard oil in the same pan. Once it starts to smoke switch off the heat and set aside. 4. Transfer the spice mix in the blender jar and grind to a coarse powder. 5. Transfer the ground mixture in a bowl. Add turmeric powder onion seeds black salt salt remaining asafoetida and mix well. 6. Squeeze lemons and mix well. 7. Remove the stems of the chillies deseed and slit without cutting through. Stuff the prepared mixture. 8. Transfer the chillies in glass jar and pour warm oil on top. Close the lid and place in the sun for 4-5 days. 9. Use as required.
