STIR FRIED CHICKEN WITH BOK CHOY Ingredients 400 grams boneless chicken legs, cut into cubes 2 cups chopped bok choy 1 tablespoon oil 1 inch ginger, sliced Salt to taste White pepper powder to taste 5-6 dried shiitake mushrooms, soaked and chopped 1 cup chopped spring onions with greens 1 teaspoon oyster sauce 1 tablespoon red chilli sauce 1 tablespoon soy sauce 1 teaspoon white wine vinegar 6-8 basil leaves + for garnishing Method 1. Heat oil in a non-stick pan. Add ginger and sauté till crisp Add chicken and mix on high heat. 2. Add salt and pepper powder, toss to mix and cook till chicken is fully done. 3. Add mushrooms, bok choyand spring onion with greens and toss to mix on high heat. Add oyster sauce, red chilli sauce and soy sauce and toss to mix. 4. Switch of heat, add white wine vinegar and toss to mix. Add torn basil leaves and mix well. 5. Serve hot garnished with carrot juliennes and basil leaves.
