PEANUT SLAW
Ingredients
1 cup creamy peanut butter
1 tbsp lemon juice
1 tbsp soy sauce
¼ cup coconut milk
1 tbsp sugar
Salt to taste
Crushed black peppercorns to taste
2-3 tbsps olive oil
2 cups shredded cabbage
1 medium carrot peeled and cut into thin strips
1 cup shredded purple cabbage
1 medium green capsicum cut into thin strips
1 medium red apple peeled and cut into thin strips
Roasted and coarsely crushed peanuts for garnish
Method
1. Blend peanut butter lemon juice soy sauce coconut milk sugar salt crushed black peppercorns and olive oil till smooth.
2. Take cabbage carrot purple cabbage green capsicum and red apple in a large bowl. Add the blended paste and mix well.
3. Serve immediately garnished with roasted peanuts.
