SPINACH NACHOS WITH SALSA
Ingredients
1 cup refined flour (maida) + for dusting
½ cup maize flour (makai atta)
¼ cup spinach puree
1 tablespoon oil
¼ teaspoon turmeric powder
Salt to taste
Salsa
1 medium tomato, finely chopped
1 small onion, finely chopped
1-2 green chillies, finely chopped
2-3 tablespoons tomato puree
1 teaspoon chopped fresh coriander leaves
Few drops Tabasco
Juice of ½ lemon
Salt to taste
Method
1. Mix together 1 cup refined flour, maize flour, oil, turmeric powder, spinach puree and salt in a bowl. Add sufficient water and knead into a semi-stiff dough. Cover with cling film and set aside for 5-10 minutes.
2. Preheat oven to 180° C.
3. To prepare salsa, mix together tomato, onion, green chillies, tomato puree, coriander leaves, Tabasco, lemon juice and salt in a bowl. Refrigerate it.
4. Divide the dough into equal portions. Dust the worktop with some refined flour and roll out each portion into thin disc.
5. Prick each disc using a fork, cut into thick strips and further into triangles.
6. Place the triangles on a baking tray. Put the tray into the preheated oven and bake for 5-10 minutes.
7. Serve with salsa.
