These crispy deep fried pakoras with the flavour of fresh fenugreek leaves are a perfect snack for the monsoon evenings. A must try !
METHI PAKORA
Ingredients
1½ cups chopped fresh fenugreek leaves (methi)
½ cup gram flour (besan)
1½ tablespoons yogurt
1 teaspoon chopped fresh coriander leaves
½ tablespoon ginger-green chilli paste
½ teaspoon red chilli powder
Salt to taste
¼ teaspoon turmeric powder
A pinch baking soda
A pinch sugar
1 tablespoon oil + for deep-frying
Method
1. Mix together fenugreek leaves, yogurt, coriander leaves, ginger-green chilli paste, chilli powder, salt, turmeric powder, baking soda, sugar, 1 tablespoon oil and gram flour in a bowl. Add water as required and mix well into a batter of dropping consistency.
2. Heat sufficient oil in a kadai. Drop in portions of the batter and deep-fry till golden brown. Drain on absorbent paper.
3. Serve hot.
