TIRANGA PANEER TIKKA
Ingredients
400 grams cottage cheese (paneer) cut into 2 inch cubes
½ cup grated cottage cheese (paneer)
1 cup hung yogurt
2 tbsps gram flour
1 tbsp ginger-garlic paste
4 tbsps chopped fresh coriander leaves
3-4 green chillies chopped
1 tsp white pepper powder
1½ tbsps lemon juice
Salt to taste
¼ cup grated khoya/mawa
5-6 saffron strands
½ tbsp red chilli powder
Thick green chutney as required
Melted butter for greasing and basting
Onion rings for serving
Lemon wedges for serving
Method
1. Mix together hung yogurt gram flour ginger-garlic paste coriander leaves green chillies white pepper powder lemon juice and salt in a bowl.
2. Slice each paneer cube into 3 layers without cutting through.
3. Mix khoya saffron strands and salt in a bowl. Mix grated paneer red chilli powder and salt in other bowl.
4. Take a paneer cube stuff paneer mixture in the first layer khoya mixture in the second layer and spread chutney in third layer.
5. Add the stuffed paneer cubes to the prepared marinade and mix gently so that all the cubes are evenly covered with the marinade. Set aside for about 1 hour.
6. Preheat the oven at 200ºC. Grease a baking tray with some butter.
7. Thread the paneer cubes onto skewers keeping sufficient distance between each.
8. Bake in preheated oven for 10-12 minutes. Baste with butter at regular intervals of time.
9. Serve hot with onion rings and lemon wedges and green chutney.
