The simplicity and mild taste of these avocado and prawn tartlets is sure to be a huge hit with all age-groups.
AVOCADO AND PRAWN MINI TARTLETS
Ingredients
½ medium avocado
¾ cup cleaned and deveined medium prawns
8 tart shells
Salt to taste
Black pepper powder to taste
½ tsp red chilli sauce
1 tsp tomato ketchup
1 tsp sweet chilli sauce
1 tbsp oil
½ lemon
½ tsp sugar
2 tbsps chopped onions
2 tbsps chopped fresh coriander leaves
Mayonnaise as required
Red radish slices for garnish
Micro greens for garnish
Method
1. Take prawns in a bowl. Add salt black pepper powder red chilli sauce tomato ketchup sweet chilli sauce and mix well. Set aside for 5-10 minutes.
2. Heat oil in a nonstick wok. Add marinated prawns and cook on high heat for 4-5 minutes. Take the pan off the heat and allow to cool.
3. Deseed avocado and extract pulp. Cut into small pieces and transfer in a bowl. Squeeze lemon add salt black pepper powder sugar onions coriander and mix well.
4. Stuff the avocado mixture in tart shells and top up with cooked prawns.
5. Drizzle mayonnaise on top and serve garnished with red radish slices and micro greens.
