ALOO PALAK KI SABZI
Ingredients
3 medium potatoes (aloo) peeled and cut into ½ inch pieces
2 cups shredded spinach (palak)
2 tbsps oil
1 tsp cumin seeds
1 medium onion chopped
1 tbsp chopped ginger
1 tbsp chopped garlic
1 medium tomato chopped
2-3 green chillies chopped
1 tsp red chilli powder
½ tsp turmeric powder
1 tsp garam masala powder
1 tsp coriander powder
Salt to taste
Method
1. Heat oil in a pan. Add potatoes and sauté for 5-6 minutes on medium heat. Drain on a plate and set aside.
2. Add cumin seeds to the same pan and once they start to change the colour add onion and sauté till light golden.
3. Add ginger garlic and sauté for a minute.
4. Add tomato green chillies and cook till tomatoes turn soft and pulpy.
5. Add red chilli powder turmeric powder garam masala powder and coriander powder and mix well.
6. Add spinach leaves potatoes salt and mix well. Cook for 2-3 minutes.
7. Transfer in a serving bowl and serve hot.
