Toovar Dana Dhekra is a special Gujarati fried snack made using season's special fresh toovar dana or pigeon peas mixed together with some homely spices. Simply serve it along with a garma garam cup of tea and have a great #WinterKaTadka afternoon.
TOOVAR DANA DHEKRA
Ingredients
Salt to taste
¼ tsp turmeric powder
1½ cups shelled fresh pigeon peas (toovar dana)
2 tsps ginger-green chilli paste
2 tbsps white sesame seeds
2 tsps chopped jaggery
¾ cup rice flour
2 tbsps sorghum (jowar) flour
2 tbsps whole wheat flour (atta)
1 tbsp gram flour (besan)
2-3 tbsps chopped fresh coriander leaves
Oil for deep frying
Green chutney to serve
Method
1. Heat 1¼ cups water in a nonstick pan. Add salt turmeric powder fresh pigeon peas and allow the water to come to a boil.
2. Add ginger-green chilli paste white sesame seeds jaggery and mix well.
3. Add rice flour sorghum flour whole wheat flour gram flour and mix well.
4. Transfer the mixture in a parat add coriander and knead well to form smooth dough.
5. Heat sufficient oil in a kadai. Divide the mixture into equal portions and roll into balls.
6. Flatten each ball lightly and deep fry till golden brown and crisp.
7. Drain on absorbent paper and serve hot with green chutney.
