GAJAR BURFI
Ingredients
5 medium carrots thickly grated
2 tbsps ghee + 1 tsp + greasing
¼ cup condensed milk
¼ cup sugar
A pinch of green cardamom powder
1½ cupsmawa
1 tbsp slivered pistachios + sprinkle
1 tbsp slivered almonds + sprinkle
Method
1. Grease a barfi tray with a little ghee and set aside.
2. Heat 2 tbsps ghee in a non-stick deep bottom pan add the carrots and sauté for 1-2 minutes on high heat.
3. Cover and cook for 8-10 minutes on medium heat sautéing occasionally. Lower the heat and add condensed milk sugar and mix well. Add a pinch of green cardamom powder and mix well.
4. Cook on medium heat till almost all the moisture is evaporated stirring continuously. Add mawa and mix well. Stirring occasionally till well combined and the mixture leaves the sides of the pan.
5. Add slivered pistachios and almonds remaining ghee and mix well. Transfer the mixture to the greased burfi tray and spread evenly. Tap it so there are no air pockets.
6. Sprinkle slivers of almonds and pistachios refrigerate until set. Cut into desired shape and serve.
