KURKURI BHINDI
Ingredients
300 grams lady’s finger (bhindi) ends trimmed and cut into thin strips
⅓ cup gram flour
1 tsp red chilli powder
2 tbsps rice flour
Salt to taste
A pinch of asafoetida
A pinch of carom seeds
½ tsp dried mango powder (amchur)
Salt to taste
Oil for deep frying
Method
1. Take lady’s fingers in a large bowl. Add gram flour red chilli powder rice flour salt asafoetida carom seeds dried mango powder and mix well. Add salt and mix well.
2. Heat sufficient oil in a kadai. Gently slide in the lady fingers in batches and deep fry till golden brown and crisp. Drain on an absorbent paper. Sprinkle chaat masala and toss well.
