GERMAN VANILLA COOKIES
Ingredients
2¼ cups refined flour (maida) + for dusting and coating
2 teaspoons vanilla essence
A pinch of salt
½ teaspoon baking powder
200 grams butter
6 tablespoons castor sugar
¾ cup almond flour
Icing sugar for dusting
Method
1. Sift together refined flour, salt and baking powder in a bowl.
2. Cream together butter and castor sugar in another bowl using an electric beater. Add vanilla essence and whisk well.
3. Add almond flour and fold. Add refined flour mixture and fold well. Mix till well combined. Refrigerate for 30 minutes.
4. Preheat oven to 180° C.
5. Divide the dough into large equal portions.
6. Dust the worktop with some refined flour and roll out each portion into thin sheets.
7. Coat the base of a medium size star cookie cutter with some refined flour and cut each sheet into stars.
8. Line a baking tray with a silicon mat and place the stars. Put the tray into the preheated oven and bake for 8-10 minutes. Remove from oven and cool.
9. Dust some icing sugar on top and serve.
