PERFECT FRENCH FRIES WITH MEXICAN MIX
Ingredients
4 medium non-starchy potatoes, washed
Salt to taste
Oil for deep-frying
Mexican mix
1 teaspoon red chilli powder
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon tomato powder
Crushed black peppercorns to taste
A pinch citric acid
1 tablespoon cheese powder
Salt to taste
Method
1. Boil sufficient water with salt in a non-stick pan.
2. Peel potatoes, cut into slices and further into batons. Wash.
3. Add potato batons to the boiling water and blanch for 3-4 minutes. Drain on a plate and cool. Transfer into a zip lock bag, seal and freeze overnight.
4. Heat sufficient oil in a kadai. Deep-fry French fries till crisp. Drain on absorbent paper.
5. Mix together chilli powder, onion powder, garlic powder, tomato powder, crushed peppercorns, citric acid, cheese powder and salt in a bowl. Use as required or store in an airtight container.
6. Transfer the fries in a zip lock bag and add sufficient amount of Mexican mix in it. Seal and shake well.
7. Serve immediately.
